For 4 persons
2cups sifted or fluid flour
4 eggs
2 cups of slightly warm milk
2 tablespoons of amber rum or orange blossom, or 1/2 glass of lager beer1 tablespoon of vanilla extract or vanilla sugar
2 tablespoons of sugar
1 pinch of salt
1/4 cup melted butter
Melt the butter in the microwave and slightly heat the milk, which should be barely warm (to avoid lumps).
Mix the sifted flour, sugar and salt in a large bowl. You can replace 50 g of flour with cornstarch for lighter weight.
Add the eggs, the melted butter, then gradually the milk, beating with a whisk well to avoid the formation of lumps.
Add beer or rum, or orange blossom water, vanilla and let it rest for 30 minutes before cooking.
Heat a knob of butter in the frying pan and place a ladle of dough on top.
Cook your pancakes on each side, so that they are well browned.
As you go, reserve on a plate, covering with a sheet of aluminum foil to keep them warm and soft. You should obtain between 15 and 20 pancakes with a pan of 20 cm diameter.
